Hello readers! In case you haven’t been following along with me on Instagram, I just got back from a beautiful five-day, six-night trip to Mexico celebrating five years with my man. Now I’m back just in time to continue my fiesta with Cinco de Mayo!
There are three essentials for any Mexican celebration: booze, food, and a festive ensemble. This may seem like a recipe for any party, so let’s spice things up a little bit.
Of course you can never go wrong with a basic cerveza or margarita on Cinco de Mayo, but Bethenny Frankel has some tips to enhance your Skinnygirl cocktail. Heat up your margarita by muddling some chopped jalapeno slices in the shaker or sweeten your margarita with some frozen berries. Eating out tonight? I perfected how to order a skinny margarita on my recent trip to Mexico. Start with clear tequila or tequila blanco. Ask for the tequila blanco on the rocks with a splash of lime juice, orange liquor, and soda water. Like your margarita a little sweeter? Ask for a splash of Sprite or other lemon/lime soda instead of soda water! No matter what your booze of choice tonight, always remember to drink like a lady!
We’re all pretty familiar with classic Mexican fare: guacamole, queso fundido, tacos, burritos, quesadillas, and so on. When it comes to dessert we think of classics like tres leches cake or churros, but in the spirit of putting a new spin on things this Cinco de Mayo I’m sharing a recipe for Mexican Hot Chocolate Cookies with a Kick courtesy of food blogger and New York Times best-selling author Bakerella.
1½ cups flour
½ cup cocoa powder
¾ tsp. baking soda
½ tsp. salt
4 tsp. cinnamon
¼ tsp. cayenne pepper
½ cup unsalted butter
1½ cups sugar
2 tsp. Mexican vanilla
1¼ cup bittersweet chocolate chips
1. Preheat oven to 350 degrees
2. In one bowl mix flour, cocoa, baking soda, salt, cinnamon and cayenne using a wire whisk.
3. In another bowl cream butter and sugar. Then add eggs and vanilla and mix til combined.
4. Add flour mixture in two portions until just combined. Then stir in chocolate chips.
5. Place balls of dough on baking sheet and bake for 10 minutes.
*Yields approximately 3 dozen cookies
Finally, the moment we’ve all been waiting for – the fashion! I’m obsessed with Anthropologie’s Mexican inspired May look book. There is one ensemble that is my particular favorite, and even better, the key pieces are all under $100. After just visiting Mexico, I can assure you this would be a go-to look for a day in the city or a night on the town. The crucial article of clothing in this outfit is the sheer fringe pullover. This is a must-have for the beach breeze in Mexico. By now you also know I can’t resist a classic black and white look, and this one is pure perfection. The only addition I would make to this ensemble would be to brighten it up with some jewelry. Accessorizing this little black look with a pop of color adds just the fun and festive touch for your next fiesta!
